From Scratch: Chocolate Peanut Butter Oat Pulp Cookies

1 cup oat pulp
1/4 cup sugar
1 T cocoa powder
1 T peanut butter
1. Mix everything together. (The consistency is similar to pancakes or cake, not thick like a cookie.)
2. Line a cookie sheet with parchment paper.
3. Pour batter onto cookie sheet in small cookie-sized dollops.
4. Bake 15 min at 350


5. Enjoy!

This is a great way to utilize the leftover pulp after making oat milk. Rather than throw it away, you can make a simple snack with it. You can find my oat milk recipe here. These cookies are not overly sweet and are very thin. They make a lovely breakfast cookie or an afternoon pick-me-up. I often crave chocolate and these have satisfied my cravings (and they’re healthier than a piece of cake).
